Namaskar dosto! Aaj hum lekar aaye hain ek Rajasthani dish jo ki dil ko choo jaati hai – Gatte ki Sabzi! Ye dish Rajasthan ki rich culinary heritage ka ek anmol hissa hai aur har khaane mein ek alag mazaa deti hai. Toh chaliye, shuru karte hain!
Gatte ki Sabzi ki Recipe: Ingredients:
- 1 cup besan (gram flour)
- 1/2 tsp ajwain (carom seeds)
- 1/2 tsp haldi powder
- 1/2 tsp lal mirch powder
- 1/2 tsp dhaniya powder
- Namak swaad anusar
- 2 tbsp dahi (curd)
- 2 tbsp tel (oil)
For Gravy:
- 2 tamatar (kate hue)
- 1 pyaaz (kati hui)
- 2 hari mirch (kati hui)
- 1/2 tsp jeera (cumin seeds)
- 1/2 tsp haldi powder
- 1/2 tsp lal mirch powder
- 1/2 tsp dhaniya powder
- Namak swaad anusar
- 2 tbsp dahi (curd)
- 2 tbsp tel (oil)
- Hara dhaniya (garnishing ke liye)
Vidhi:
- Sabse pehle gatte ke liye besan mein ajwain, haldi powder, lal mirch powder, dhaniya powder, namak, dahi aur thoda sa oil mix karein.
- Ek tight dough banayein aur usse lamba chhoti belan ki tarah gatte bana lein.
- Ek bartan mein paani garam karein aur gatte ko 10-15 minutes tak boil karein.
- Boiled gatte ko nikaal kar thandi paani mein daal dein aur phir slice kar lein.
- Ab ek pan mein tel garam karein aur usmein jeera, kati hui pyaaz aur hari mirch daal kar saute karein.
- Tamatar aur sabhi masale daal kar pakayein aur dahi daal kar mix karein.
- Gravy ko thoda sa pakne dein aur fir usmein sliced gatte daal dein.
- Gatte ko gravy mein acche se mix karein aur 5-7 minutes tak pakayein.
- Hara dhaniya se garnish karke garama garam serve karein.
