Namaskar dosto! Aaj hum lekar aaye hain ek mazedar aur traditional Delhi Recipe – Malpua! Ye dish Delhi ki rich culinary heritage ka ek anmol hissa hai aur iska swaad laajawab hota hai. Toh chaliye, shuru karte hain!
Ingredients:
- 1 cup chole (kabuli chana), soaked overnight
- 2-3 medium-sized onions, finely chopped
- 2-3 tomatoes, pureed
- 1-2 green chilies, finely chopped
- 1-inch ginger, grated
- 3-4 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Oil for cooking
- Fresh coriander leaves for garnishing
For Bhature:
- 2 cups all-purpose flour (maida)
- 1/2 cup yogurt (dahi)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Salt to taste
- Oil for frying
Instructions:
- Sabse pehle, soaked chole ko pressure cooker mein ubaal lein. Ek se do seeti aane tak ubalne dein aur phir chole ko chhanni mein nikal kar side mein rakh dein.
- Ek pan mein tel garam karein aur cumin seeds, adrak, lehsun aur hari mirch daalein. Thodi der tak bhunein.
- Ab ismein pyaaz daal kar halka sa bhunein aur phir tamatar ka puree daalein. Tamatar achhe se gal jaane tak pakayein.
- Ab masale daal kar mix karein – haldi powder, dhaniya powder, lal mirch powder, garam masala aur namak. Sab achhe se milayein aur masala bhunein.
- Chole ko is masale mein daal kar mix karein aur thodi der pakayein. Agar chole thoda sukhne lagte hain, toh thoda paani daal kar cover karke pakayein.
- Ab bhature ke liye, maida mein dahi, baking powder, baking soda aur namak daal kar achhe se dough banayein. Dough ko 2 ghante tak rakhne dein taki wo achhe se ferment ho jaaye.
- Fermented dough ko chhote chhote gol phulko (bhature) banayein.
- Ek kadhai mein tel garam karein aur gol phulko ko golden brown hone tak fry karein. Bhature ko tissue paper par nikal kar excess oil absorb karne dein.
- Ab garam garam Chole ko bhature ke saath serve karein. Bhature ke saath thodi hari mirch aur pyaaz ka salad bhi serve kar sakte hain.
- Garnish karte waqt thoda sa hara dhaniya daal kar swaad badha sakte hain.
