Namaskar dosto! Aaj hum aapke liye laye hain ek mazedar North Indian dish – Kulcha Chole! Ye dish Punjab ka ek mashhoor street food hai aur iska swaad kisi bhi meal ko aur bhi swaadisht banata hai. Toh chaliye, shuru karte hain!
Kulcha Chole ki Recipe:
Ingredients:
- 1 cup chole (kabuli chana), soaked overnight
- 2 medium pyaaz (kati hui)
- 2 medium tamatar (kate hue)
- 1 tbsp adrak aur lehsun ka paste
- 2-3 hari mirch (kati hui)
- 1 tsp chole masala
- 1/2 tsp haldi powder
- 1/2 tsp lal mirch powder
- 1 tsp dhaniya powder
- Namak swaad anusar
- 2 tbsp tel (oil)
- Hara dhaniya (garnishing ke liye)
For Kulcha:
- 2 cups maida (plain flour)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tbsp dahi (curd)
- 1 tbsp tel (oil)
- Namak swaad anusar
- Pani
Vidhi:
- Sabse pehle chole ko paani mein bhigo kar rakh dein, kam se kam 6-8 ghante ya puri raat tak.
- Bhigoye hue chole ko pressure cooker mein daal kar ubal lein, phir seeti laga dein aur chole pakayein.
- Ek pan mein tel garam karein aur usmein kati hui pyaaz daal kar bhunein.
- Pyaaz bhunne ke baad usmein adrak aur lehsun ka paste daal kar saute karein.
- Ab tamatar daal kar mix karein aur masale daal kar bhunein.
- Masalo mein chole masala, haldi powder, lal mirch powder, dhaniya powder aur namak daal kar mix karein.
- Ab ubalaye hue chole ko is masale mein daal kar acche se mix karein aur dhimi aanch par 10-15 minutes tak pakayein.
- Kulcha banane ke liye, maida mein baking powder, baking soda, dahi, tel, namak aur thoda sa pani daal kar soft dough bana lein.
- Dough ko 1 ghanta tak rest karne dein.
- Ab dough se kulcha bana lein aur tawa par sek kar golden brown hone tak cook karein.
- Kulcha ko ghee ya butter se serve karein, saath mein swaadisht chole aur garnishing ke liye hare dhaniya daal kar.
